Our specially chosen variety is buttery, smooth, and delicious. Enjoy it roasted with onions and other quick-cooking veggies on a sheet pan (with a sprinkling of fresh herbs on the finish), or layer lightly cooked squash with sauteed onions and gruyere cheese into a classic squash gratin (and top it with panko tossed in a little butter for a delicious golden crust)! Yellow squash is also a welcome ingredient in curries, soups, and light pasta dishes. No matter how you slice it, it's delicious!
