Ping Tung Eggplant, 1 lb.

One of our favorite varieties of eggplant to grow and eat, Ping Tung is a long, slender Chinese eggplant that is easy to prepare and enjoy. Never bitter, you can completely skip the step of salting the eggplant before cooking with it. Slice it into rings, saute, and add to homemade pizza; cut them in half, brush with olive oil, and roast in the oven until tender -- finishing them with a topping of gremolata or a generous handful of minced fresh herbs; saute one or two pieces with other summer vegetables in the spirit of ratatouille...the list goes on.
