Featured prominently in Italian cuisine, spigarello is a delicious, nutrient-rich heirloom variety of leafy green related to broccoli. Its flavor is mild and sweet, and both the leaf and stem are edible. Spigarello never produces a full head, but is grown for it's delicious and tender leaves. Use spigarello in your favorite recipes that call for leafy greens such as kale or spinach. Especially good sauteed, braised, or stirred into soups or stews. Can be eaten raw or juiced, but cooking it really brings out its excellent flavor!
